bbq prawns with avocado salsa - pete evans recipe

Ingredients:

• Oil
• 4 large Green Prawns, peeled with tails attached
• 1/2 Red Onion finely diced
• 1/2 large Avocado
• Fresh squeezed Lemon juice
• Salt
• Pepper
• Semi-dried Tomatoes diced
• Red chilli finely diced
• Roasted Red Capsicum
• Coriander

Method:

1. Heat oil in pan. Add prawns (1-2 mins per side).
2. Combine Avocado, Red Onion, Lemon Juice, Salt, Pepper, Semi-Dried Tomatoes, Chilli, Capsicum, Coriander. Mix gently in bowl.
3. Plate mixture.
4. Interlock prawns and place atop salsa.
5. Enjoy.
