Linguini with smoked salmon, tomato, basil and lime cream ingredients:

  • ½  litre cream
  • ¼ cup tomato paste
  • 3 x ripe tomatoes – diced
  • ¼  bunch basil-shredded
  • 1 x Spanish onion-diced
  • 1 clove garlic - chopped
  • 250 g smoked salmon-thinly sliced
  • 1 x bunch baby spinach leaves-washed
  • Juice from 2 limes
  • Salt and cracked black pepper
  • Cooked linguini pasta
  • Chopped chives for garnish
  • Shaved parmesan to serve (optional)

Method:

  1. whisk tomato paste with cream and simmer on stove on low heat till reduced slightly (5-10 mins).
  2. mix tomato, basil, onion and garlic in a small bowl
  3. heat large frying pan ‘till hot and add tomato mix
  4. cook on high heat for 1 minute then add cream sauce.
  5. reduce sauce a little then add cooked linguini, smoked salmon, spinach and seasoning. Simmer for 2 mins
  6. add lime juice, stir and serve garnished with chopped chives and parmesan (if using).
