VEGETARIAN RICE PAPER ROLLS WITH PRAWNS, GINGER SOY SAUCE AND LIME HERB SALAD

(serves 8 - makes approx. 32)

Roll ingredients

  • 1 cup toasted peanuts – roughly chopped
  • 4 kaffir lime leaves – very finely shredded
  • 100 g rice noodles – soaked in hot water for 15 mins then drained and cut into 4 cm lengths
  • 2 teas sesame oil
  • ⅓ cup lime juice
  • ⅓ cup sweet chilli sauce
  • 2 tablespoons fish sauce
  • ¼ x bunch mint – chopped
  • ½ x bunch coriander leaves – chopped    
  • 1 carrot – peeled and grated
  • 1 red or yellow capsicum – cut in fine strips
  • 100 g snow pea sprouts – cut in half
  • ¼ x bunch shallots – chopped
  • 1 pkt 16 cm rice paper sheets

Roll method

  1. mix all ingredients together except rice paper.
  2. one by one, soak each rice paper sheet in warm water for 60 seconds until soft then drain on a paper towel to pat dry.
  3. place soaked sheet on a flat surface and place 2 tablespoons of mixture on the bottom third then roll up tucking the sides in first.
  4. place on glad wrap slightly apart so they don’t stick together. Keep in fridge until serving covered with clean damp cloth.

Ginger soy dipping sauce ingredients

  • 1 teas sesame oil
  • 1 clove garlic-chopped
  • 2 shallots-chopped
  • 1 teas grated fresh ginger
  • ¾ cup ketjap manis
  • ½ cup sweet chilli sauce
  • 2 finely shredded lime leaves

Ginger soy dipping sauce method

  1. heat oil and add garlic, shallots and ginger. Just fry for 30 seconds but do not brown.
  2. add other ingredients and simmer til thick (approx 10 mins)
  3. remove from heat and cool
  4. strain through a fine sieve

Herb salad garnish

  • Young mixed lettuce leaves
  • Picked coriander leaves
  • Picked mint leaves
  • Red chilli – cut in fine strips
  • Shallots – cut in lengths

Herb salad dressing

  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 2 tablespoons grated palm sugar
  • 4 tablespoons salad oil
  • blend altogether using food processor or hand blender

To serve

  1. place 4 rolls on each plate
  2. top with 3 prawns
  3. toss herb salad with dressing
  4. sit salad on top of prawns
  5. place sauce in a small dish for dipping on the side
